Stunning Fatless (almost) Flourless (almost) Chocolate Cake

This recipe, like the recipes handed down from Great Aunts and Grandmothers, is hastily scribbled down on a scrap of paper and hard to make sense of. But oh! The untangling and working out what it means is so very worth it.

It came from one of my sisters-in-law (or is it sister-in-laws?) I have 4 of them. She got it from her sister who is also my sister-in-law. And she got it somewhere off the internet. Anyway, regardless it is very good. I am not going to decode it for you but give it to you as is – your challenge (a bit like the GBBO challenges) is to work out what you need to do. Good luck and remember in cooking there are no disasters whatever you end up with will be edible and I can tell you, in this case beautiful!

1 TBS water

130grams  light muscavo sugar

4 eggs

50 gm flour

125g butter

200gm 70% solid chocolate

50gm ground almonds

1 tsp baking powder

Add choc, water, butter.

Melt + cool

Separate eggs

Cool mix + eggs + dry ingredients

Whisk egg whites – add to mixture.

Bake until ready.

(A clue – 15 minutes – it is meant to be moist and sticky.)

Good luck. It is the perfect treat.
