Here is a quick and very easy way to stir -fry prawns. The end result is hot, sour and completely delicious encrusted prawns. It’s a Madhur Jaffrey recipe from her book ‘Curry Easy.’ Apart from being really simple it makes a lovely, healthy, light lunch. Try it. You’ll love it.
450g/ 1lb medium sized raw prawns (peeled & de-veined)
1/4 tsp ground turmeric
1/4 tst cayenne pepper or to taste
1 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp salt
2 tablespoons olive, rapeseed or peanut oil
1/4 tsp whole brown or yellow mustard seeds
1/4 teaspoons whole cumin seeds
1 large clove garlic, peeled & chopped
1 1/2 teaspoons lemon juice
Wash the prawns well. Leave in a sieve and then pat them dry. Put them in a bowl and add the spices and salt. Mix well.
Put the oil in a frying pan and set to medium heat. When hot put in the mustard and cumin seeds. As soon as the seeds begin to pop, add the garlic and stir. Quickly put in the prawns and stir once or twice, then immediately turn the heat down and let the prawns gently cook for a few minutes. Add the lemon juice and toss to mix. Serve straight away.
